Blue Corn

Why Blue? The deep blue color of this corn means it is very high in antioxidants, higher than the superfood blueberries and substantially more nutritious than yellow or white corn. The taste is sweet but not supersweet. This is a very good thing because there are no spikes in glucose, which contributes to diabetes and other metabolic syndrome diseases. Corn originated in the Americas and was highly colorful, with deep reds, blues and black. This variety, Jade Blue Corn, is one of the oldest, dating to at least 1540. It is high in protein, low in carbs, manages blood pressure, aids in cancer and diabetes prevention, supports eye and kidney health and slows aging.
