Shown to have more antioxidants than all vegetables except three (broccoli, green peppers and burdock). This combined with impressive anti-inflammatory properties makes it one of the best vegetables to eat. It is also high in vitamins C, E, K, beta-carotene, folate and minerals zinc, manganese and selenium. It  contains the amino acid asparagine which is important in the function and development of the brain. Importantly, it contains glutathione, a detoxifying compound that can help destroy carcinogens.
